Ingredients
  

For the Lasagna:
  • 2 tablespoons olive oil for sautéing vegetables
  • 1 piece red bell pepper chopped
  • 1 piece zucchini chopped
  • 1 piece yellow onion chopped
  • 3 cups fresh spinach
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 9 pieces no-boil lasagna noodles
  • to taste Salt and pepper to enhance flavors

Method
 

Preparation Steps:
  1. Step 1: Preheat your oven to 375°F (190°C) and gather all ingredients.
  2. Step 2: In a large skillet, heat olive oil over medium heat. Sauté onion and red bell pepper for 3-4 minutes until translucent. Add zucchini and cook for another 2 minutes. Stir in spinach, season with salt and pepper, and cook until wilted, about 2-3 minutes.
  3. Step 3: In a mixing bowl, combine ricotta cheese with a pinch of salt and pepper until smooth.
  4. Step 4: In the baking dish, spread a layer of marinara sauce. Place 3 lasagna noodles, half of the ricotta mixture, half of the sautéed vegetables, and 1 cup of mozzarella cheese.
  5. Step 5: Repeat layers with remaining ingredients, finishing with noodles, marinara sauce, and mozzarella on top.
  6. Step 6: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is golden.
  7. Step 7: Let the lasagna rest for 10-15 minutes before slicing.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze unbaked lasagna for up to 3 months for easy meal prep.
