  • 1 tablespoon cornstarch
  • 1/4 cup cold water for mixing with cornstarch
  • 1/4 cup cold water for adjusting sauce consistency
  • 1/2 cup low-sodium soy sauce or tamari
  • 1/4 cup maple syrup
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Method
 

Directions: Vegan Teriyaki Sauce
  1. In a small bowl, combine the cornstarch with 1/4 cup of cold water. Whisk until smooth and set aside.
  2. In a small saucepan, combine the remaining 1/4 cup cold water, soy sauce or tamari, maple syrup, rice vinegar, grated ginger, and minced garlic.
  3. Place the saucepan over medium heat. Stir gently, bringing it to a simmer. Allow it to cook for about 2-3 minutes.
  4. Whisk in the cornstarch mixture once the sauce is simmering. Continue to stir as it thickens for about 1-2 minutes.
  5. Taste your Vegan Teriyaki Sauce and adjust flavors if necessary.
  6. Once thickened to your liking, remove from heat and allow to cool. Use immediately or store in a container.

Notes

  • This sauce can be used as a marinade for tofu or tempeh.
  • Add sesame oil for an extra layer of flavor.
  • Spice it up with red pepper flakes or sriracha.
