Ingredients
  

  • 1 cup sourdough starter
  • 3 large ripe bananas
  • 1 Tbsp ground flax seed
  • 3 Tbsp water
  • 2 Tbsp avocado oil or melted coconut oil
  • 1 tsp pure vanilla extract
  • 1/2 cup coconut sugar or brown sugar
  • 1 cup gluten-free all-purpose flour or regular flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 tsp ground cinnamon
  • 3/4 cup raw walnuts, chopped (optional)

Method
 

  1. Step 1: Prepare the Flax Egg - In a small bowl, combine the ground flaxseed with the water. Stir and let it sit for about 5-10 minutes until it thickens.
  2. Step 2: Mash the Bananas - In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  3. Step 3: Mix Wet Ingredients - Add the flax egg, avocado oil, vanilla extract, and coconut sugar to the mashed bananas. Mix until well combined.
  4. Step 4: Combine Dry Ingredients - In a separate bowl, whisk together the flour, baking soda, sea salt, and ground cinnamon.
  5. Step 5: Combine Wet and Dry Ingredients - Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Step 6: Fold in the Walnuts - If using walnuts, fold them into the batter.
  7. Step 7: Prepare the Baking Pan - Preheat your oven to 350°F (175°C). Grease your baking pan or line it with parchment paper.
  8. Step 8: Bake the Bread - Pour the batter into the prepared baking pan and bake for 45-55 minutes.
  9. Step 9: Cool and Serve - Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • For a more intense banana flavor, use four bananas instead of three.
  • If you don’t have walnuts, substitute with pecans or skip nuts altogether.
  • This bread freezes beautifully! Wrap it tightly to keep it fresh.
