Ingredients

For the Gravy:
  • 4 cups vegetable broth
  • 1/3 cup chickpea flour
  • 1/3 cup cooked chickpeas
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon black pepper

Equipment

  • Medium saucepan
  • Whisk
  • Measuring cups and spoons
  • Garlic press (optional)

Method

Instructions:
  1. Step 1: Sauté the Garlic: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
  2. Step 2: Mix the Chickpea Flour: In a small bowl, mix the chickpea flour with a cup of the vegetable broth. Whisk until smooth, ensuring there are no lumps.
  3. Step 3: Combine Ingredients: Pour the remaining vegetable broth into the saucepan with the sautéed garlic. Stir well to combine.
  4. Step 4: Thicken the Gravy: Add the chickpea flour mixture to the saucepan, whisking constantly over medium heat. Continue to cook for about 5-7 minutes, or until the gravy thickens to your desired consistency.
  5. Step 5: Season to Taste: Add the cooked chickpeas, sea salt, paprika, dry mustard, and black pepper. Stir well and let simmer for an additional 2-3 minutes, allowing the flavors to meld together.
  6. Step 6: Serve and Enjoy: Once the gravy has thickened and the flavors are well combined, remove from heat. Serve hot over your favorite dishes and enjoy the delightful taste of Vegan Chickpea Gravy!
