Unagi Don

Ingredients
  

For the Unagi Don:
  • 28 ounce unagi fillets fresh or frozen
  • 1/4 cup unagi sauce sweet soy-based
  • 2 cups sushi rice short-grain
  • 2 cups water
  • sesame seeds for garnish
  • chopped green onions for garnish

  • Grill or broiler
  • Sharp knife
  • Serving bowls

Method
 

Cooking Instructions
  1. Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in your rice cooker or pot, and cook according to the instructions. Once cooked, let it sit covered for about 10 minutes to steam.
  2. Preheat your grill or broiler. Brush both sides of the unagi fillets with the unagi sauce. Grill the fillets for about 5-6 minutes per side, or until they are heated through and have a slightly charred appearance.
  3. Once the unagi fillets are cooked, remove them from the grill and let them rest for a couple of minutes. Use a sharp knife to slice the fillets into bite-sized pieces.
  4. In serving bowls, place a generous scoop of the cooked sushi rice. Arrange the sliced unagi fillets on top of the rice. Drizzle a little more unagi sauce over the top for added flavor.
  5. Sprinkle sesame seeds and chopped green onions over your Unagi Don for an appealing presentation. Serve immediately while the dish is warm.

Notes

  • Make sure to use high-quality unagi fillets for the best flavor.
  • Cooked sushi rice can be stored in the fridge for up to 3 days.
  • For a vegan version, consider using grilled eggplant or tofu.
