Turmeric Rice

Ingredients
  

  • 2 tbsp butter or olive oil
  • 1 medium onion finely chopped
  • 2 medium garlic cloves minced
  • 1 tsp turmeric powder
  • Sea salt (to taste, depending on the broth used)
  • Black pepper (to taste)
  • 1 cup Basmati or Jasmine rice
  • 1 ½ cups veggie broth or chicken broth
  • 1 tbsp chopped mint
  • 1 medium lemon washed (not sliced)

Method
 

  1. Start by gathering and measuring all your ingredients to make the cooking process smooth and efficient.
  2. In a medium saucepan, heat the butter or olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until it becomes translucent. Then, add the minced garlic and sauté for another minute until fragrant.
  3. Sprinkle in the turmeric powder, sea salt, and black pepper. Stir well to coat the onions and garlic with the spices, letting them toast slightly to release their flavors.
  4. Add the Basmati or Jasmine rice to the pot, stirring to combine it with the aromatic mixture. Allow the rice to toast for about 2 minutes, which enhances its flavor and texture.
  5. Carefully add the veggie broth or chicken broth to the pot, ensuring the rice is fully submerged. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
  7. Once the rice is cooked, remove the pot from heat. Let it sit, covered, for 5 minutes. Then, fluff the rice with a fork. Stir in the chopped mint for a refreshing finish.
  8. To enhance the flavors, place the washed lemon in the pot. As you serve the rice, squeeze some fresh lemon juice over it for a bright, zesty touch.

Notes

  • Allow the rice to cool at room temperature before storing to prevent condensation in the container.
  • Keep leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • Reheat in the microwave with a splash of water to restore moisture.
