Ingredients
  

For the Mac and Cheese:
  • 1 lb elbow macaroni noodles
  • 7 tbsp butter
  • 1 tbsp minced garlic
  • 2 tbsp all-purpose flour
  • 3 cups half and half
  • 1 cup heavy whipping cream
  • 4 cups shredded cheddar cheese blend
  • 2 cups shredded mild cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded white cheddar cheese
  • 1 cup shredded mozzarella cheese
  • To taste Chopped fresh parsley for garnish

Method
 

Instructions
  1. Start by bringing a large pot of salted water to a boil. Once boiling, add the elbow macaroni noodles and cook until al dente according to package instructions, usually around 7-8 minutes. Drain the pasta and set it aside.
  2. In a skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the all-purpose flour and cook for another minute, whisking constantly to create a smooth roux.
  3. Gradually whisk in the half and half and heavy whipping cream, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens slightly, about 3-5 minutes.
  4. Lower the heat and begin adding the shredded cheddar cheese blend, mild cheddar cheese, white cheddar cheese, and mozzarella cheese, stirring continuously until melted and smooth. Add the garlic powder, onion powder, paprika, salt, and black pepper.
  5. Add the cooked macaroni to the cheese sauce, stirring well to ensure every piece is coated in that delicious, cheesy goodness.
  6. You can serve it immediately, garnished with chopped fresh parsley for a pop of color. Alternatively, if you prefer a baked version, transfer the mac and cheese to a baking dish, top with extra cheese, and bake in a preheated oven at 350°F for about 20 minutes until bubbly and golden on top.

Notes

  • Don’t overcook the pasta; it should be al dente as it will continue to cook in the cheese sauce.
  • Be careful not to let the cheese sauce boil; this can cause it to become grainy.
  • Make sure to stir continuously when adding the cheese to prevent lumps.
