Ingredients
  

For the Brownies:
  • 2 cups pitted dates loosely packed
  • 1.5 cups walnuts
  • 6 tbsp cacao or cocoa powder
  • 1.5 tsp pure vanilla extract
  • 2 tsp water
  • 0.25 + 0.125 tsp salt
  • 0.25 cup cacao or cocoa powder for the topping
  • 0.5 cup pure maple syrup or honey or agave
  • 2 tbsp vegetable or melted coconut oil
  • 0.5 tsp pure vanilla extract for the mixture

  • 9x9-inch baking dish
  • Parchment paper
  • Measuring cups and spoons

Method
 

Instructions:
  1. Step 1: Prepare Your Ingredients. Start by measuring out all your ingredients. Ensure your dates are pitted and soft; soak them in warm water if dry.
  2. Step 2: Blend the Base. In your food processor, combine dates, walnuts, 6 tbsp of cacao/cocoa powder, 1.5 tsp of vanilla extract, water, and salt. Pulse until clumped together.
  3. Step 3: Add Sweetness and Fat. Add maple syrup (or honey/agave) and coconut oil to the food processor. Blend until smooth and sticky.
  4. Step 4: Taste and Adjust. Taste the mixture and add more cacao or salt as desired.
  5. Step 5: Spread into the Baking Dish. Line the baking dish with parchment paper and press the brownie mixture evenly into the dish.
  6. Step 6: Chill and Set. Cover and refrigerate for at least 2 hours to set.
  7. Step 7: Cut and Serve. Remove from the dish and cut into squares. Dust with cocoa powder if desired.

Notes

  • Soak hard dates in warm water for better texture.
  • Don’t over-process; keep a thick, doughy consistency.
  • Press firmly into the dish for dense brownies.
  • Chill adequately for perfect texture.
