Step 1: Prepare the Cheesecake Layer
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Incorporate sour cream and vanilla extract. Mix until fully combined.
- Pour the cheesecake batter into the prepared springform pan and smooth the top.
- Bake for 45-50 minutes, or until the center is set but slightly jiggly. Allow it to cool completely before refrigerating for at least 4 hours, or overnight.
Step 2: Make the Red Velvet Cake Layers
- Cream together butter and sugar until light and fluffy.
- Add eggs, buttermilk, food coloring, vanilla extract, and vinegar. Mix until combined.
- Sift together cake flour, baking soda, salt, and cocoa powder.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the batter evenly between two greased 9-inch round cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a cooling rack.
Step 3: Prepare the Cream Cheese Frosting
- Beat cream cheese until smooth.
- Gradually add sifted powdered sugar and vanilla extract, mixing until creamy and fluffy.
- If desired, add cream of coconut for extra flavor. Mix until well combined.
Step 4: Assemble the Cake
- Place one red velvet cake layer on a serving platter. Spread a layer of cream cheese frosting on top.
- Remove the cheesecake from the springform pan and place it on top of the first cake layer.
- Add another layer of frosting on top of the cheesecake, then place the second red velvet cake layer on top.
- Frost the top and sides of the entire cake with the remaining cream cheese frosting.
- Chill the cake for at least 30 minutes before slicing to allow the frosting to set.
