  • 13.5 oz coconut milk
  • 1.5 cups half and half
  • 2 large eggs beaten
  • 1 cup granulated sugar
  • 0.5 cup corn starch
  • 0.25 tsp salt
  • 2 cups sweetened flaked coconut divided
  • 1 tsp coconut or vanilla extract
  • 1 deep dish pie shell baked and cooled
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla or coconut extract

Method
 

  1. Step 1: Prepare the Pie Shell - Preheat your oven according to the pie crust instructions. Bake and allow it to cool completely.
  2. Step 2: Make the Coconut Filling - In a medium saucepan, whisk together coconut milk, half and half, sugar, corn starch, and salt over medium heat. Whisk until thickened and bubbly, about 5-7 minutes.
  3. Step 3: Add the Eggs - Remove from heat and whisk in beaten eggs and egg yolk until well combined. Cook for another 2-3 minutes, stirring constantly.
  4. Step 4: Stir in Coconut and Flavor - Fold in 1 1/2 cups of flaked coconut and extract until combined.
  5. Step 5: Pour into Pie Shell - Pour the filling into the cooled shell and smooth the top. Cover and refrigerate for at least 4 hours.
  6. Step 6: Whip the Cream - Combine heavy whipping cream, powdered sugar, and extract in a bowl. Whip until soft peaks form.
