  • 1 tablespoon yellow curry powder
  • 1 tablespoon coconut sugar
  • Sea salt to taste

Method
 

  1. Preheat your oven to 350°F (175°C). This temperature is perfect for roasting the cashews to a golden brown.
  2. In a mixing bowl, combine the raw unsalted cashews with the melted coconut oil. Stir well to ensure that all the cashews are evenly coated.
  3. Sprinkle in the yellow curry powder and coconut sugar. Use a spatula to mix everything together, ensuring that the cashews are well coated with the spices and oil.
  4. Spread the cashew mixture evenly across a baking sheet. Make sure they are in a single layer for even roasting. Sprinkle with sea salt to taste.
  5. Place the baking sheet in the preheated oven. Roast for about 15-20 minutes, stirring halfway through to ensure even cooking. Keep an eye on them to prevent burning; they should be golden and fragrant.
  6. Once roasted, remove the cashews from the oven and let them cool completely. As they cool, they will become even crunchier. Serve as a snack or store for later.
