Ingredients
  

  • 1 1/4 pounds salmon cut into 4 individual fillets
  • 1/2 cup teriyaki sauce for marinating and glazing
  • 1 batch Teriyaki Vegetable Stir Fry with Rice mix of your favorite vegetables
  • 4 green onions chopped for garnish
  • 1 tablespoon sesame seeds toasted

Method
 

  1. Start by placing the salmon fillets in a shallow dish. Pour 1/4 cup of the teriyaki sauce over the fillets, ensuring they are well-coated. Allow the salmon to marinate for at least 15 minutes.
  2. While the salmon is marinating, cook your rice according to package instructions or in a rice cooker. Fluff the rice with a fork and set aside.
  3. In a non-stick skillet, heat a small amount of oil over medium heat. Add your choice of vegetables and stir-fry for about 5-7 minutes until tender but still crisp. Pour in the remaining teriyaki sauce and toss to coat the vegetables evenly. Cook for an additional minute and remove from heat.
  4. In the same skillet, add a little more oil if necessary, and heat over medium-high heat. Place the marinated salmon fillets skin-side down in the skillet. Cook for 4-5 minutes on each side, or until the salmon is cooked through. Brush with extra teriyaki sauce while cooking.
  5. To assemble the Teriyaki Salmon Bowls, start with a scoop of rice at the bottom of each bowl. Top with a portion of the stir-fry and a salmon fillet. Garnish with green onions and sesame seeds. Drizzle additional teriyaki sauce over the top if desired.
