Cooking Instructions:
- Step 1: Preheat Your Waffle Maker. Preheat your waffle maker according to the manufacturer’s instructions.
- Step 2: Prepare the Wet Ingredients. In a mixing bowl, whisk together the unsweetened coconut milk, tahini, and the egg yolks. Add the coconut sugar and vanilla extract, mixing until well combined.
- Step 3: Mix the Dry Ingredients. In another bowl, combine the brown rice flour, baking powder, baking soda, cinnamon, and a pinch of salt. Stir well to ensure the leavening agents are evenly distributed.
- Step 4: Combine Wet and Dry Ingredients. Pour the dry ingredients into the wet mixture. Gently stir until just combined. A few lumps are fine!
- Step 5: Whip the Egg Whites. In a clean bowl, beat the egg whites until they form stiff peaks.
- Step 6: Fold in the Egg Whites. Gently fold the whipped egg whites into the batter using a spatula.
- Step 7: Cook the Waffles. Spray your preheated waffle maker with nonstick cooking oil. Pour the batter onto the waffle maker and cook according to your waffle maker’s instructions, typically around 4-6 minutes, or until crispy and golden.
- Step 8: Serve with Syrup. Carefully remove the waffles from the maker and serve them warm with your choice of syrup.
Notes
- For a nut-free option, use sunflower seed butter instead of tahini.
- Store leftover waffles in an airtight container in the refrigerator for up to 3 days.
- Prepare the batter the night before and store it in the fridge for quick cooking in the morning.
