Ingredients
  

For the Waffles:
  • 1 3/4 cups unsweetened coconut milk (or your favorite non-dairy milk)
  • 1/3 cup tahini
  • 3 large eggs (separated)
  • 3 tablespoons coconut sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups brown rice flour
  • 1 1/2 tablespoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1 pinch salt
  • 1 spray Nonstick cooking oil
  • as needed Warm date honey syrup or maple syrup (for serving)

Method
 

Cooking Instructions:
  1. Step 1: Preheat Your Waffle Maker. Preheat your waffle maker according to the manufacturer’s instructions.
  2. Step 2: Prepare the Wet Ingredients. In a mixing bowl, whisk together the unsweetened coconut milk, tahini, and the egg yolks. Add the coconut sugar and vanilla extract, mixing until well combined.
  3. Step 3: Mix the Dry Ingredients. In another bowl, combine the brown rice flour, baking powder, baking soda, cinnamon, and a pinch of salt. Stir well to ensure the leavening agents are evenly distributed.
  4. Step 4: Combine Wet and Dry Ingredients. Pour the dry ingredients into the wet mixture. Gently stir until just combined. A few lumps are fine!
  5. Step 5: Whip the Egg Whites. In a clean bowl, beat the egg whites until they form stiff peaks.
  6. Step 6: Fold in the Egg Whites. Gently fold the whipped egg whites into the batter using a spatula.
  7. Step 7: Cook the Waffles. Spray your preheated waffle maker with nonstick cooking oil. Pour the batter onto the waffle maker and cook according to your waffle maker’s instructions, typically around 4-6 minutes, or until crispy and golden.
  8. Step 8: Serve with Syrup. Carefully remove the waffles from the maker and serve them warm with your choice of syrup.

Notes

  • For a nut-free option, use sunflower seed butter instead of tahini.
  • Store leftover waffles in an airtight container in the refrigerator for up to 3 days.
  • Prepare the batter the night before and store it in the fridge for quick cooking in the morning.
