Tacos Dorados

Ingredients
  

  • 1 pound ground beef (lean or extra lean)
  • 1/2 large onion (diced)
  • 3 tablespoons taco seasoning
  • 1 1/2 cups shredded cheese
  • 10 small corn tortillas
  • 1 cup tomatoes (diced)
  • 1 large avocado (mashed)
  • 1/2 cup sour cream

Method
 

  1. In a skillet over medium heat, add the ground beef and diced onions. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Use a spatula to break the beef into small pieces as it cooks.
  2. Once the beef is cooked, stir in the taco seasoning. Follow the instructions on the seasoning package for water or additional ingredients if needed. Allow the mixture to simmer for about 2 minutes, letting the flavors meld together.
  3. On a clean surface, take a corn tortilla and add a generous spoonful of the beef mixture in the center. Sprinkle a bit of shredded cheese on top, then fold the tortilla in half to enclose the filling. Repeat this process for all tortillas.
  4. In the same skillet, add enough oil to cover the bottom. Heat the oil over medium-high heat. Once hot, carefully place the folded tacos in the oil, cooking for about 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels.
  5. While the tacos are frying, prepare your toppings. Dice the tomatoes, mash the avocado, and set out the sour cream.
  6. Once the tacos are crispy, place them on a serving platter. Serve with diced tomatoes, mashed avocado, and sour cream on the side. Enjoy your Tacos Dorados hot and fresh!

Notes

  • For a vegetarian version, substitute ground beef with black beans or lentils and keep the cheese.
  • Customize your taco filling with other vegetables like bell peppers or zucchini for added nutrients.
  • If you prefer a spicier kick, add diced jalapeños to the beef mixture or serve with hot salsa.
  • These tacos can also be baked for a lighter option; just brush them with a little oil and bake at 400°F for about 15-20 minutes.
