Taco Pie

This Taco Pie is a crowd-pleaser! Packed with chicken, beans, and cheese, it's the perfect comfort food for any gathering.

Ingredients
  

For the Taco Pie:
  • 10 pieces corn tortillas
  • 1 can cream of chicken soup (or homemade)
  • 1 can diced tomatoes with green chilies
  • 1 15-ounce can black beans (drained and rinsed)
  • 1/2 piece green bell pepper (diced)
  • 1 packet taco seasoning
  • 3 cups cooked chicken (chopped, rotisserie works great)
  • 1 1/2 cups Mexican blend cheese
  • Sour cream (for serving)
  • Freshly chopped cilantro (for garnish)
  • Chopped avocado (for garnish)

Equipment

  • Large mixing bowl
  • 9x13-inch baking dish
  • Wooden spoon or spatula
  • Knife and cutting board
  • Measuring cups and spoons

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the cream of chicken soup, diced tomatoes with green chilies, black beans, diced green bell pepper, taco seasoning, and chopped chicken. Stir until all ingredients are well mixed.
  3. Step 3: In your greased 9x13 inch baking dish, lay out 5 corn tortillas on the bottom, overlapping them slightly to cover the entire base of the dish.
  4. Step 4: Spread half of the chicken and bean mixture over the layer of tortillas. Sprinkle 1 cup of the Mexican blend cheese on top of the filling.
  5. Step 5: Top the cheese layer with the remaining corn tortillas, followed by the rest of the filling mixture. Finish by sprinkling the remaining cheese over the top.
  6. Step 6: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  7. Step 7: Once baked, remove the Taco Pie from the oven and allow it to cool for about 5-10 minutes.
  8. Step 8: Slice the Taco Pie into squares and serve with dollops of sour cream, chopped cilantro, and avocado on top. Enjoy!

Notes

  • Customize your Taco Pie with your favorite toppings!
  • Make it ahead of time and refrigerate before baking.
  • For a vegetarian option, omit the chicken and add more beans or veggies.
