Ingredients
  

  • 1/2 cup roasted sweet potato (about 1/2 medium potato)
  • 1 cup plant-based milk (soy, oat, almond, or cashew)
  • 1 serving vanilla protein powder OR 2-3 teaspoons maple syrup
  • 1/2 cup unsweetened nondairy yogurt
  • 1 tablespoon almond butter
  • 1/2-1 inch fresh ginger (depending on preference; or sub 1/2 teaspoon dried ground ginger)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg and/or cardamom (optional)
  • small pinch salt
  • 1 tablespoon chia seeds or hemp hearts or ground flax seed (optional, for added fiber and healthy fats)

Method
 

  1. Step 1: Roast the Sweet Potato - Preheat your oven to 400°F (200°C). Wash and peel your sweet potato, cut it into cubes, spread on a baking sheet, and roast for about 25-30 minutes until fork-tender. Allow to cool slightly before using.
  2. Step 2: Gather Your Ingredients - Once your sweet potato is ready, gather all the ingredients listed above for smooth blending.
  3. Step 3: Blend It All Together - Combine the roasted sweet potato, plant-based milk, protein powder (or maple syrup), frozen banana, nondairy yogurt, almond butter, ginger, cinnamon, nutmeg (if using), and a small pinch of salt in your blender.
  4. Step 4: Adjust Consistency - Blend on high until smooth, scraping down the sides as needed. Add more plant-based milk if the smoothie is too thick.
  5. Step 5: Taste and Adjust Flavor - Taste the smoothie and add more maple syrup for sweetness or more spices if desired.
  6. Step 6: Serve and Enjoy - Pour your Sweet Potato Smoothie into a glass or bowl and enjoy immediately. Top with chia seeds, hemp hearts, or a sprinkle of cinnamon for an extra touch.

Notes

  • Experiment with different types of nut or seed butter for varied flavors.
  • If using canned sweet potato puree, ensure it’s unsweetened.
  • Add ice for a colder, thicker smoothie.
