- Step 1: Activate the Yeast - In a small bowl, combine the active dry yeast, 2 tablespoons of sugar, and 1/4 cup of warm water. Stir gently and let it sit for about 5-10 minutes, until it becomes frothy.
- Step 2: Prepare the Dough - In a large mixing bowl, combine 4 cups of flour and salt. In another bowl, whisk together the beaten eggs, oil, and the remaining warm water. Once the yeast mixture is ready, add it along with the egg mixture to the flour mixture. Stir until combined.
- Step 3: Knead the Dough - Transfer the dough to a lightly floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic.
- Step 4: First Rise - Place the kneaded dough in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 1 to 2 hours, or until it has doubled in size.
- Step 5: Shape the Dough - Once the dough has risen, punch it down to release the air. Divide it into three equal pieces, roll each into a long rope, braid them together, and place on a baking sheet lined with parchment paper.
- Step 6: Second Rise - Cover the shaped challah with a kitchen towel and let it rise again for about 30-45 minutes.
- Step 7: Preheat the Oven - While the dough is rising, preheat your oven to 350°F (175°C).
- Step 8: Egg Wash - Brush the top with the beaten egg yolk and sprinkle poppy seeds if desired.
