Ingredients
  

  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter room temperature
  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup M&M candies (or a combination of M&Ms and chocolate chips)

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Line your baking sheet with parchment paper to prevent sticking.
  3. In a medium bowl, whisk together the all-purpose flour, baking soda, and kosher salt.
  4. In a large mixing bowl, cream the unsalted butter, light brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Add the egg and vanilla extract to the butter-sugar mixture and mix until fully combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  7. Fold in the M&M candies (and chocolate chips if using) with a spatula.
  8. Drop rounded portions of dough onto the prepared baking sheet, leaving space for spreading.
  9. Bake for 10-12 minutes until edges are lightly golden and centers look slightly underbaked.
  10. Allow cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • For extra chewiness, chill the dough for 30 minutes before baking.
  • Don’t overbake! Remove cookies when slightly underdone for a soft texture.
  • Mix in your favorite nuts or dried fruit for added flavor.
