Ingredients

  • 1 9-inch unbaked pastry crust store-bought or homemade
  • 1 cup sugar granulated
  • 1/4 cup cornstarch
  • 2 cups milk whole or alternative
  • 1/4 cup butter cubed, unsalted
  • 1 teaspoon vanilla extract pure
  • 1 tablespoon cinnamon sugar for topping

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C). If using a store-bought crust, place it in your pie pan. If making your own, roll out the dough and fit it into the pan, trimming excess.
  2. Step 2: In a medium saucepan, whisk together the sugar and cornstarch until well combined.
  3. Step 3: Slowly pour in the milk while continuously whisking to dissolve the sugar and cornstarch.
  4. Step 4: Cook over medium heat, stirring frequently, until thickened to a pudding-like consistency, about 5-7 minutes.
  5. Step 5: Remove from heat, then stir in the cubed butter and vanilla extract until the butter is melted.
  6. Step 6: Pour the filling into the prepared crust, smoothing the top with a spatula.
  7. Step 7: Bake for 30-35 minutes until edges are golden and filling is set, with a slight jiggle in the center.
  8. Step 8: Cool on a rack. Once at room temperature, sprinkle with cinnamon sugar before slicing. Serve chilled or at room temperature.

Notes

  • This pie can be made a day in advance and stored in the refrigerator.
  • For a different flavor, try almond extract or a hint of nutmeg.
  • Leftover pie can be enjoyed for breakfast with coffee!
