Method
- Preheat your oven to 375°F (190°C) for even baking.
- Lightly grease a mini muffin tin and press each wonton wrapper into the cups.
- In a mixing bowl, combine artichoke hearts, spinach, cheese, mayonnaise, garlic, and red peppers. Mix until creamy and slightly chunky.
- Fill each wonton cup with the mixture, piling it high for extra flavor.
- Bake for 15-20 minutes until the wrappers are golden brown and the filling is bubbly.
- Allow to cool slightly before removing from the tin and serving warm.
Notes
- You can freeze the assembled cups before baking for up to 2 months.
- Fresh spinach can be used in place of frozen; just cook it down first.
- Substitute mayonnaise with Greek yogurt or sour cream for a different flavor.
