Ingredients
  

  • 12 pieces wonton wrappers
  • 14 oz artichoke hearts drained and chopped
  • 1 cup Italian blend cheese
  • 10 oz frozen spinach thawed and drained, chopped
  • 1/3 cup mayonnaise
  • 2 tsp minced garlic
  • 1/4 cup red pepper chopped

Method
 

  1. Preheat your oven to 375°F (190°C) for even baking.
  2. Lightly grease a mini muffin tin and press each wonton wrapper into the cups.
  3. In a mixing bowl, combine artichoke hearts, spinach, cheese, mayonnaise, garlic, and red peppers. Mix until creamy and slightly chunky.
  4. Fill each wonton cup with the mixture, piling it high for extra flavor.
  5. Bake for 15-20 minutes until the wrappers are golden brown and the filling is bubbly.
  6. Allow to cool slightly before removing from the tin and serving warm.

Notes

  • You can freeze the assembled cups before baking for up to 2 months.
  • Fresh spinach can be used in place of frozen; just cook it down first.
  • Substitute mayonnaise with Greek yogurt or sour cream for a different flavor.
