Ingredients
  

For the Beef:
  • 3/4 lb 95% lean ground beef
  • 1 small onion minced
  • 6 medium scallions chopped
  • 2 cloves garlic minced
  • 1/2 tsp crushed red pepper
  • 2 medium carrots sliced into thin rounds and halved
  • 1 1/2 cups riced cauliflower fresh or frozen
  • 1/2 red bell pepper chopped
  • 1 cup jasmine rice
  • 2 tbsp soy sauce plus more to taste
  • 1 tsp Asian fish sauce
  • 1/3 cup fresh chopped cilantro

Method
 

Directions:
  1. Step 1: Prepare the Jasmine Rice
    Begin by rinsing the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice with 1 1/2 cups of water. Bring it to a boil, cover, and then reduce the heat to low. Let it simmer for about 15 minutes, or until the water is absorbed and the rice is tender. Remove from heat and let it sit, covered, for a few more minutes.
  2. Step 2: Cook the Beef
    While the rice cooks, heat a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  3. Step 3: Sauté the Aromatics
    Once the beef is cooked, push it to the side of the skillet and add the minced onion and garlic. Sauté for about 2 minutes until fragrant and translucent.
  4. Step 4: Add the Veggies
    Stir in the chopped scallions, carrots, riced cauliflower, and red bell pepper. Sprinkle in the crushed red pepper and cook for an additional 5 minutes, stirring occasionally until the vegetables are tender.
  5. Step 5: Season the Dish
    Pour in the soy sauce and Asian fish sauce. Stir everything together to combine, letting the flavors meld for another 2 minutes. Taste and adjust the seasoning with more soy sauce if needed.
  6. Step 6: Serve It Up
    Fluff the jasmine rice with a fork and serve topped with the spicy beef and vegetable mixture. Finish with fresh chopped cilantro for a burst of freshness.

Notes

  • Using fresh riced cauliflower gives a great texture and flavor, but frozen works just as well.
  • Adjust the soy sauce based on your taste preference and dietary needs.
  • If you like a sweeter flavor, add a teaspoon of brown sugar to the beef mixture.
  • For a gluten-free option, substitute tamari for soy sauce.
