  • 16 ounces low fat cream cheese
  • 2 large eggs
  • 8 ounces Colby Jack cheese shredded
  • 1 can chopped green chiles 4 ounces, drained
  • 1 cup reduced fat sour cream
  • 1 cup sliced green onion
  • 1 cup chopped tomatoes
  • 1 cup chopped yellow and orange bell peppers
  • 1 cup sliced olives

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (180°C) to ensure even baking.
  2. Step 2: In a mixing bowl, combine the tortilla chips and melted butter. Press into a 9-inch pie dish.
  3. Step 3: Beat the cream cheese until smooth, then add eggs one at a time, mixing well.
  4. Step 4: Stir in Colby Jack cheese, green chiles, and sour cream until well combined.
  5. Step 5: Fold in green onions, tomatoes, and bell peppers gently.
  6. Step 6: Pour the mixture into the crust and bake for 25-30 minutes until set and lightly golden.
