Prep Time 15 minutes
Total Time 15 minutes
Servings: 6 servings
Course: Appetizer
Cuisine: American

Ingredients

  • 1/4 cup chopped red onions, scallions, or chives
  • 3/4 cup whipped cream cheese
  • 2 teaspoons drained capers, chopped
  • 1 tablespoon fresh dill, chopped plus more for garnish
  • 12 ounces nova lox or smoked salmon, chopped
  • 3 count English cucumbers, ends trimmed

Equipment

  • Cutting board
  • Knife
  • Mixing Bowl
  • Spoon or spatula
  • Serving Platter

Method

  1. Start by trimming the ends of the English cucumbers. Slice them into 1/2-inch thick rounds. Aim for uniform thickness to ensure even bites. Place the cucumber slices on a paper towel to absorb any excess moisture.
  2. In a mixing bowl, combine the whipped cream cheese, chopped red onions (or your choice of scallions or chives), drained capers, and fresh dill. Mix well until all ingredients are thoroughly combined. The mixture should be creamy and flavorful.
  3. Take a cucumber slice and spread a generous amount of the cream cheese mixture on top. Then, add a piece of the chopped smoked salmon on top of the cream cheese. If desired, sprinkle a little more dill for garnish.
  4. Repeat the assembly process for all the cucumber slices until you’ve used up all the ingredients. Arrange the completed Smoked Salmon Cucumber Bites on a serving platter, and they are ready to impress!

Notes

  • For the best flavor, use high-quality smoked salmon.
  • Feel free to get creative with herbs; chives or parsley can also be delightful additions.
  • Make sure the cucumbers are dry before assembling to prevent a soggy bite.
  • These bites can be made a few hours in advance; just cover them in the fridge until it’s time to serve.
