Ingredients
  

  • 2 lbs ground chicken Use regular for extra flavor and moisture.
  • 3 cloves garlic minced
  • 1 each red bell pepper cored and finely chopped
  • 1/2 cup yellow onion finely chopped
  • 1/2 cup hoisin sauce this thick, sweet sauce gives the dish its signature flavor
  • 2 Tbsp soy sauce for an umami boost
  • Salt and freshly ground black pepper to taste
  • 1 can (8 oz) sliced water chestnuts drained and rinsed
  • 1 1/2 cups cooked white or brown rice a great base if you prefer to serve it over rice
  • 3 each green onions sliced for garnish
  • 1 Tbsp rice vinegar optional
  • 1 1/2 tsp sesame oil optional
  • 2 heads iceberg lettuce use leaves as wraps

Method
 

  1. Prepare all your ingredients. Mince the garlic, chop the red bell pepper and onion, and drain the water chestnuts.
  2. In your slow cooker, combine the ground chicken, minced garlic, chopped bell pepper, onion, hoisin sauce, soy sauce, salt, and pepper. Mix everything together until combined.
  3. Stir in the sliced water chestnuts, ensuring they are evenly distributed throughout the mixture.
  4. Cover the slow cooker and cook on low for 4 to 6 hours, or until the chicken is fully cooked and tender. If you're in a rush, you can also cook it on high for 2 to 3 hours.
  5. While the chicken is cooking, prepare your rice according to package instructions. Set aside when done.
  6. Once the chicken mixture is ready, serve it in lettuce leaves. You can add a scoop of rice if desired, and top with sliced green onions for garnish.
  7. For an extra flavor kick, drizzle a bit of rice vinegar and sesame oil over the wraps before serving.

Notes

  • Store leftover filling in an airtight container in the refrigerator for up to 3 days.
  • Keep lettuce wraps separate from the filling to maintain crunch.
  • Reheat the filling in the microwave or stovetop before serving.
