Ingredients

For the Marinade:
  • 2 pounds skirt steak
  • ½ cup olive oil
  • ½ cup soy sauce
  • ¼ cup lemon juice
  • ¼ cup Worcestershire sauce
  • 1 tablespoon minced garlic
  • 2 tablespoons Italian seasoning
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 pinch red pepper flakes

Equipment

  • Mixing Bowl
  • Whisk
  • Resealable plastic bag or shallow dish
  • Grill or grill pan
  • Meat thermometer

Method

Instructions:
  1. Step 1: Prepare the Marinade - In a mixing bowl, combine the olive oil, soy sauce, lemon juice, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and red pepper flakes. Whisk until all ingredients are well blended.
  2. Step 2: Marinate the Steak - Place the skirt steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4-6 hours for maximum flavor.
  3. Step 3: Preheat the Grill - Preheat your grill to medium-high heat to ensure a nice sear on your steak.
  4. Step 4: Grill the Steak - Remove the skirt steak from the marinade and let any excess drip off. Discard the marinade. Place the steak on the grill and cook for about 3-5 minutes per side.
  5. Step 5: Rest and Slice - Once cooked to your liking, remove the steak from the grill and let it rest for about 5-10 minutes before slicing against the grain.

Notes

  • For extra flavor, marinate the steak overnight.
  • Always let the steak rest after cooking to retain its juices.
  • Substitute soy sauce with tamari for a gluten-free option.
