Ingredients
  

For the Casserole:
  • 1 cup fat-free Greek yogurt
  • 1/2 cup skim milk
  • 1 cup sugar-free salsa
  • 3 cups cooked, shredded chicken approximately 1 pound of chicken breasts
  • 1 cup frozen corn kernels
  • 1 medium red bell pepper diced
  • 1 cup reduced-fat cheddar cheese shredded
  • 12 six-inch corn tortillas

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C) to ensure it’s nice and hot when your casserole goes in.
  2. Step 2: If you haven’t already, cook and shred about 1 pound of chicken breasts. You can boil or bake them seasoned with salt and pepper for extra flavor.
  3. Step 3: In a mixing bowl, combine the fat-free Greek yogurt, skim milk, and sugar-free salsa. Stir until well blended and creamy.
  4. Step 4: In your prepared baking dish, start layering your casserole. Begin with a layer of corn tortillas, followed by half of the chicken, half of the corn, half of the diced red bell pepper, and half of your yogurt-salsa mixture. Sprinkle with a layer of reduced-fat cheddar cheese.
  5. Step 5: Continue layering with the remaining ingredients in the same order: corn tortillas, chicken, corn, bell pepper, yogurt-salsa mixture, and finish with a final layer of cheese.
  6. Step 6: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Step 7: Once done, remove the casserole from the oven and allow it to cool for about 5-10 minutes before slicing. Serve warm and enjoy your delicious, healthy meal!

Notes
