- Start by patting the chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil. Add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the tomato sauce, stirring to combine with the onion and garlic. Bring to a simmer.
- Stir in the pitted green olives and let the sauce simmer for about 5 minutes.
- Return the chicken to the skillet, spoon some sauce over the top, and let simmer for another 5 minutes.
- Serve the chicken with generous spoonfuls of sauce and garnish with fresh herbs if desired.

- For added richness, finish the dish with a sprinkle of feta cheese before serving.
