Ingredients
  

For the Chicken:
  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon Italian seasoning
  • 4 tablespoons olive oil divided
  • 2 cloves garlic minced
  • 1 piece onion diced
  • 2 cups tomato sauce
  • 1 cup pitted green olives

Method
 

Instructions
  1. Start by patting the chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of olive oil. Add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the tomato sauce, stirring to combine with the onion and garlic. Bring to a simmer.
  5. Stir in the pitted green olives and let the sauce simmer for about 5 minutes.
  6. Return the chicken to the skillet, spoon some sauce over the top, and let simmer for another 5 minutes.
  7. Serve the chicken with generous spoonfuls of sauce and garnish with fresh herbs if desired.

Notes

  • For added richness, finish the dish with a sprinkle of feta cheese before serving.
  • If you prefer a thicker sauce, let it simmer uncovered for a few more minutes.
  • This dish can be meal prepped and stored in the refrigerator for up to 4 days.
