  • 1 cup chickpea flour (95g)
  • 1 cup oat milk (2.5dl)
  • a pinch black salt
  • to taste salt
  • 2 medium tomatoes
  • 1 small onion
  • 1 clove garlic (small or to taste)
  • 6-8 leaves basil
  • 1 tbsp olive oil
  • to taste salt and pepper

Method
 

Directions: Savory Eggless French Toast with Bruschetta
  1. In a mixing bowl, combine the chickpea flour, oat milk, black salt, and regular salt. Whisk until smooth and free of lumps. Let the batter sit for about 10 minutes to thicken slightly.
  2. While the batter is resting, chop the tomatoes, onion, and garlic finely. In a separate bowl, mix the chopped ingredients with olive oil, adding salt and pepper to taste. Tear the basil leaves and mix them in as well. Set aside to allow the flavors to meld.
  3. Place a non-stick frying pan over medium heat and add a drizzle of olive oil. Allow the oil to heat up until it shimmers.
  4. Dip each slice of your favorite bread into the chickpea batter, ensuring both sides are well-coated. Place the coated bread slices onto the hot pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Once cooked, transfer the savory French toast to a serving plate. Generously spoon the fresh bruschetta topping over each slice. Garnish with additional basil leaves if desired.
