Ingredients
  

  • 16 pieces sausage patties
  • 1 cup all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1 large egg
  • 3 tbsp unsalted butter melted
  • 1 tbsp maple syrup

Method
 

  1. Begin by cooking your sausage patties. In a skillet over medium heat, cook the patties until they are browned and fully cooked through, about 4-5 minutes per side. Once done, remove them from the skillet and set them aside on a plate lined with paper towels to drain any excess grease.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk these dry ingredients together until well blended. In a separate bowl, whisk together the milk, egg, melted butter, vanilla extract, and maple syrup. Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  3. Heat your griddle or frying pan over medium heat. You can test if it's ready by sprinkling a few drops of water on the surface; if they sizzle, you’re good to go.
  4. For each pancake, pour about ¼ cup of batter onto the griddle. Immediately place a sausage patty in the center of the batter. Then, pour a little more batter on top of the sausage to cover it completely. Cook until you see bubbles form on the surface of the pancake, about 2-3 minutes.
  5. Carefully flip the pancake using a spatula and cook for an additional 2-3 minutes on the other side, until golden brown. Repeat this process with the remaining batter and sausage patties, adjusting the heat as necessary to avoid burning.
  6. Once all the pancakes are cooked, stack them on a serving plate. Drizzle with additional maple syrup if desired, and enjoy your delicious Sausage Stuffed Pancakes warm!
