  • 2 pounds fresh green beans trimmed
  • 1 cup sun-dried tomatoes in oil, chopped
  • 3 tablespoons melted butter
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped pecans

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Trim the ends of the fresh green beans, ensuring they are clean and ready for roasting.
  3. In a large mixing bowl, combine the trimmed green beans and chopped sun-dried tomatoes. Pour in the melted butter and olive oil, then sprinkle with salt and black pepper. Toss everything together until the green beans are well-coated.
  4. Transfer the green bean mixture to a large baking sheet. Spread them out in a single layer to ensure even roasting.
  5. Place the baking sheet in the preheated oven and roast for about 15-20 minutes, tossing halfway through.
  6. In the last 5 minutes of roasting, sprinkle the chopped pecans over the green beans.
  7. Once the green beans are tender and slightly charred, remove them from the oven. Serve immediately.

Notes

  • For a nut-free version, substitute pecans with sunflower seeds.
  • To make it vegan, use plant-based butter instead of regular butter.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
