Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 1 cup sugar
  • 1 large egg lightly beaten
  • 1 cup all-purpose flour
  • 1 tsp vanilla
  • 1 cup chopped pecans
  • to taste powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the butter, brown sugar, and sugar. Cream until light and fluffy, about 3-4 minutes.
  3. Add the lightly beaten egg and vanilla. Beat until well combined.
  4. Gradually mix in the all-purpose flour until just incorporated.
  5. Gently fold in the chopped pecans with a spatula.
  6. Drop rounded balls of dough onto a baking sheet lined with parchment paper, leaving about 2 inches between each cookie. Bake for 10-12 minutes.
  7. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack. Dust with powdered sugar before serving.

Notes

  • For lower fat, substitute half of the butter with unsweetened applesauce.
  • Use whole wheat flour for added fiber.
  • Store in an airtight container at room temperature for up to one week.
