Ingredients
  

  • 1 tube pre-cooked polenta (16 ounces)
  • 2 tablespoons olive oil
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, finely chopped
  • to taste Salt
  • to taste Pepper
  • to taste Preferred dipping sauce (e.g., marinara, garlic aioli, spicy ketchup)

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Remove the pre-cooked polenta from its tube and slice it into fry shapes, about 1/4 to 1/2 inch thick.
  3. In a mixing bowl, combine olive oil, garlic powder, onion powder, rosemary, salt, and pepper. Toss the polenta fries in the mixture until evenly coated.
  4. Spread the seasoned polenta fries in a single layer on a baking sheet.
  5. Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. Let them cool for a minute before serving with your favorite dipping sauce.

Notes

  • For extra crunch, broil the fries for the last 2-3 minutes, watching closely.
  • Prepare ahead and store in the refrigerator before baking, adjusting baking time if cold.
  • Experiment with different seasonings to suit your taste.
  • Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days.
