  • 2 tablespoons Parmesan cheese (grated)
  • ½ teaspoon red pepper flakes (optional, for a kick)
  • 2 tablespoons toasted pine nuts (optional)
  • Fresh basil leaves (for garnish)

Method
 

Cooking Instructions:
  1. Step 1: Cook the Pasta - Begin by bringing a large pot of salted water to a boil. Once boiling, add in your choice of pasta. Cook according to package instructions until al dente, usually around 8-10 minutes. Reserve about ½ cup of pasta water before draining the pasta.
  2. Step 2: Sauté the Chicken - While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the bite-sized chicken pieces to the skillet. Season with salt, black pepper, and Italian seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  3. Step 3: Add Garlic and Pesto - Once the chicken is fully cooked, add the minced garlic to the skillet. Sauté for an additional 1-2 minutes until the garlic becomes fragrant. Next, stir in the basil pesto, coating the chicken evenly. If you’re opting for a creamier dish, add the heavy cream at this stage and mix well.
  4. Step 4: Combine Pasta and Sauce - Add the drained pasta to the skillet with the chicken and pesto mixture. Toss everything together, ensuring the pasta is well-coated. If the sauce appears too thick, add a splash of the reserved pasta water to loosen it up.
  5. Step 5: Garnish and Serve - Once everything is well combined, remove the skillet from heat. Sprinkle with grated Parmesan cheese and red pepper flakes if using. For a delightful crunch, add toasted pine nuts. Garnish with fresh basil leaves for a pop of color and flavor. Serve immediately with additional Parmesan cheese on the side.
