Ingredients
  

  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken breast cut into bite-sized pieces
  • 0.25 cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 0.25 teaspoon red pepper flakes
  • 0.5 cup chicken broth
  • 1 tablespoon lime juice
  • Steamed rice for serving
  • 0.25 cup chopped cilantro for garnish
  • 0.25 cup chopped peanuts for garnish

Method
 

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is shimmering, add the bite-sized chicken pieces. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Make sure to stir occasionally for even cooking.
  2. While the chicken is cooking, in a mixing bowl, combine the creamy peanut butter, soy sauce, honey, minced garlic, grated ginger, and red pepper flakes. Stir until the mixture is smooth and well-blended.
  3. Once the chicken is cooked, reduce the heat to medium-low. Pour the peanut sauce over the chicken in the skillet, and add the chicken broth and lime juice. Stir everything together, allowing the sauce to coat the chicken evenly. Let it simmer for 3-5 minutes until heated through.
  4. Serve the Peanut Chicken over a bed of steamed rice. For a finishing touch, garnish with chopped cilantro and chopped peanuts. Enjoy your flavorful creation!
