Preparation Steps:
- Start by bringing a large pot of water to a boil. Add the ramen noodles and cook according to the package instructions, usually about 3-5 minutes. Once cooked, drain and set aside.
- In a medium bowl, whisk together the peanut butter, soy sauce, brown sugar, cornstarch, crushed red pepper, and 1 cup of water until smooth and well combined. Adjust the consistency with more water if needed.
- In a large skillet or wok, heat a splash of oil over medium-high heat. Add your cut-up vegetables and stir-fry for about 4-5 minutes until they are tender but still crisp.
- To the skillet with the vegetables, add the chopped cooked chicken, sliced water chestnuts, and bamboo shoots. Pour the peanut sauce over the mixture and stir to combine. Cook for an additional 2-3 minutes until everything is heated through.
- Add the cooked ramen noodles to the skillet. Gently toss everything together until the noodles are well coated in the peanut sauce and mixed with the chicken and vegetables.
- Spoon the Peanut Chicken Bowl into serving bowls. Top with chopped peanuts and sliced green onions for an extra crunch and flavor. Serve warm and enjoy!
