Ingredients
  

  • 1 cup rolled oats (regular or gluten-free)
  • 1/2 cup natural creamy peanut butter (almond butter works too for nut allergies)
  • 1/2 cup flaxmeal
  • 2 tablespoons 100% pure maple syrup
  • 2-3 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (or more, if you prefer)
  • 1 teaspoon sea salt
  • Optional add-ins shredded coconut, dried cranberries, chopped nuts, etc.

Method
 

  1. In a large mixing bowl, combine the rolled oats, flaxmeal, and sea salt. Stir them together until well mixed.
  2. Add the natural peanut butter, maple syrup, honey, and vanilla extract to the bowl. Mix the ingredients until thoroughly combined.
  3. Gently fold in the chocolate chips and any optional add-ins like shredded coconut or dried cranberries.
  4. Using your hands or a cookie scoop, roll the mixture into balls about 1 inch in diameter and place them on a baking sheet or plate.
  5. Chill the balls in the refrigerator for about 30 minutes to help them firm up.
  6. After chilling, enjoy your Peanut Butter Oatmeal Balls! Store leftovers in an airtight container in the refrigerator.

  • Freeze the balls for up to three months for longer storage.
