Ingredients
  

For the Granola:
  • 1/3 cup creamy peanut butter Choose a natural variety for the best flavor.
  • 1/3 cup honey Acts as a natural sweetener.
  • 3 tablespoons melted coconut oil Adds healthy fats.
  • 1-1/2 teaspoons vanilla extract Adds aromatic touch.
  • 1/4 teaspoon salt Enhances flavor.
  • 1/2 teaspoon ground cinnamon Optional, for warmth.
  • 3 cups old fashioned oats Do not use quick or steel cut oats.
  • 1/2 cup toasted coconut flakes Provides crunch and tropical flavor.
  • 1/2 cup chocolate chips Use milk, semi-sweet, or dark chocolate.

Method
 

Directions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Line a large baking sheet with parchment paper.
  3. Step 3: In a mixing bowl, combine the peanut butter, honey, melted coconut oil, vanilla extract, and salt. Stir until smooth.
  4. Step 4: If using, add the ground cinnamon and mix evenly.
  5. Step 5: In a large bowl, combine the oats and toasted coconut flakes. Pour the peanut butter mixture over them and mix thoroughly.
  6. Step 6: Transfer the mixture to the prepared baking sheet and spread it evenly.
  7. Step 7: Bake for about 20-25 minutes, stirring halfway through.
  8. Step 8: Once golden, remove from oven, let cool for 10 minutes, then sprinkle chocolate chips on top.
  9. Step 9: Allow to cool completely before transferring to an airtight container.

Notes

  • Store in an airtight container for up to two weeks.
  • Freeze for up to three months in a freezer-safe container.
  • Reheat in the oven at 300°F for warm granola.
