- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Line a large baking sheet with parchment paper.
- Step 3: In a mixing bowl, combine the peanut butter, honey, melted coconut oil, vanilla extract, and salt. Stir until smooth.
- Step 4: If using, add the ground cinnamon and mix evenly.
- Step 5: In a large bowl, combine the oats and toasted coconut flakes. Pour the peanut butter mixture over them and mix thoroughly.
- Step 6: Transfer the mixture to the prepared baking sheet and spread it evenly.
- Step 7: Bake for about 20-25 minutes, stirring halfway through.
- Step 8: Once golden, remove from oven, let cool for 10 minutes, then sprinkle chocolate chips on top.
- Step 9: Allow to cool completely before transferring to an airtight container.

- Freeze for up to three months in a freezer-safe container.
