  • 1/2 cup creamy peanut butter
  • 1/2 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Line a cookie sheet with parchment paper or a silicone baking mat to prevent sticking.
  3. Step 3: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.
  4. Step 4: In a large mixing bowl, cream together the unsalted butter, creamy peanut butter, light brown sugar, and granulated sugar for 2-3 minutes until light and fluffy.
  5. Step 5: Beat in the large egg and vanilla extract until the mixture is smooth and creamy.
  6. Step 6: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
  7. Step 7: Using a cookie scoop or tablespoon, scoop dough and roll into balls. Roll each ball in extra granulated sugar before placing them on the cookie sheet, spacing them about 2 inches apart.
  8. Step 8: Press down on each cookie ball with a fork to create a criss-cross pattern.
  9. Step 9: Bake for 10-12 minutes until edges are lightly golden. Cookies may look underbaked but will firm up as they cool.
  10. Step 10: Let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense peanut flavor, use chunky peanut butter or add a tablespoon of peanut butter powder.
  • Adjust sweetness by swapping some granulated sugar for brown sugar.
