Ingredients
  

  • 1 cup creamy peanut butter Choose a natural variety
  • 1 cup unsalted butter at room temperature
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt Enhances the sweetness
  • 4 cups powdered sugar
  • 4 cups semisweet chocolate chips for coating
  • 0.5 cup vegetable shortening for chocolate coating

Method
 

  1. In a large mixing bowl, combine the creamy peanut butter and unsalted butter. Using an electric mixer, beat until smooth. Add the vanilla extract and salt, mixing until incorporated.
  2. Gradually add the powdered sugar, mixing on low speed to prevent a sugar cloud, then increase speed until well combined and dough-like.
  3. Using your hands, scoop out tablespoon-sized portions of the mixture, roll into balls, and place on a parchment-lined cookie sheet. Chill in the refrigerator for about 30 minutes.
  4. Melt the chocolate chips and vegetable shortening together in a double boiler or microwave-safe bowl, stirring until smooth.
  5. Dip each peanut butter ball into the melted chocolate, leaving a small portion exposed at the top. Allow excess chocolate to drip off before placing back on the cookie sheet.
  6. Return the cookie sheet to the refrigerator for about 30 minutes, or until the chocolate is completely set. Enjoy your homemade peanut butter buckeyes!

Notes

  • Store in an airtight container in the refrigerator for up to two weeks.
