Ingredients
  

  • 1/2 cup honey
  • 1 tablespoon coconut oil
  • 1/3 cup peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 cups oats
  • 1/2 cup honey roasted peanuts chopped

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8x8-inch baking dish with parchment paper.
  3. In a mixing bowl, combine the honey and coconut oil. Microwave for about 20-30 seconds until melted. Stir in the peanut butter, vanilla extract, and ground cinnamon.
  4. Fold in the oats and chopped honey roasted peanuts until well combined.
  5. Transfer the mixture to the baking dish and press it down evenly.
  6. Bake for 20-25 minutes or until the edges are golden brown.
  7. Let cool for about 10 minutes, then lift out using the parchment paper and cool completely before cutting.

Notes

  • Store in an airtight container for up to a week.
  • Freeze for up to three months for longer storage.
  • Try adding chocolate chips or dried fruits for different flavors!
