Ingredients
  

  • 6 large potatoes (such as Yukon Gold, peeled and cut into cubes or wedges)
  • 4 tablespoons olive oil

  • 5 cloves garlic (minced)
  • 1 cup Parmesan cheese (freshly grated)
  • 1 cup fresh parsley (chopped)

Method
 

  1. Preheat your oven to 425°F (220°C). A hot oven is key to achieving that crispy texture.
  2. Peel and chop the potatoes into cubes or wedges, making sure they are all roughly the same size for even cooking.
  3. In a mixing bowl, combine the potato pieces with olive oil, minced garlic, salt, and pepper. Toss well until all the potatoes are evenly coated.
  4. Sprinkle the grated Parmesan cheese over the potatoes and toss gently to ensure they are well coated.
  5. Spread the potatoes in a single layer on a baking sheet. Bake in the preheated oven for about 25-30 minutes.
  6. Halfway through the cooking time, use a spatula to flip the potatoes to ensure they brown evenly. Continue roasting until they are golden brown and crispy.
  7. Once cooked, remove the potatoes from the oven and transfer them to a serving dish. Sprinkle with freshly chopped parsley for a pop of color and added freshness.
