  1. Begin by washing the small red potatoes thoroughly to remove any dirt. Cut each potato in half and set them aside.
  2. In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes, or until the onions become translucent. Next, add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  3. Once the onions and garlic are fragrant, add the halved potatoes to the skillet. Sprinkle the smoked paprika, salt, and pepper over the potatoes. Stir everything together, ensuring that the potatoes are well-coated with the oil and spices.
  4. Now it's time to add the chicken broth to the skillet. Pour it in gently, making sure the potatoes are partially submerged in the liquid.
  5. Bring the mixture to a gentle simmer. Cover the skillet with a lid and cook for about 20-25 minutes, or until the potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
  6. Once the potatoes are tender, remove the lid and let them cook for an additional 5 minutes to allow the broth to reduce slightly. Taste and adjust seasoning if necessary.
