Ingredients

For the Chicken:
  • 3 lbs chicken leg quarters cut in half
  • ½ cup olive oil
  • 1 tbsp sweet paprika
  • 6 cloves garlic minced
  • 1 tbsp dried Italian herbs
  • ¾ tsp chili powder (optional)
  • Salt and pepper to taste
  • Lemon wedges for garnish

Equipment

  • Large mixing bowl
  • Roasting pan or baking sheet
  • Meat thermometer
  • Sharp knife
  • Serving Platter

Method

Instructions:
  1. In a large mixing bowl, combine the olive oil, sweet paprika, minced garlic, dried Italian herbs, chili powder (if using), and a generous amount of salt and pepper. Whisk everything together until well combined.
  2. Add the chicken leg quarters to the bowl, ensuring they are well-coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or up to overnight.
  3. Preheat your oven to 400°F (200°C).
  4. Once marinated, arrange the chicken pieces in a single layer on a roasting pan or baking sheet, pouring any remaining marinade over them.
  5. Place the chicken in the preheated oven and roast for about 40-45 minutes, or until the internal temperature reaches 165°F (75°C). Broil for the last 2-3 minutes for extra crispiness.
  6. Remove the chicken from the oven and let it rest for about 5 minutes before serving. Garnish with lemon wedges.

Notes

  • Marinate longer for deeper flavor.
  • Ensure enough space between chicken pieces for proper roasting.
  • Always check internal temperature to ensure safety.
