- In a large mixing bowl, combine the olive oil, sweet paprika, minced garlic, dried Italian herbs, chili powder (if using), and a generous amount of salt and pepper. Whisk everything together until well combined.
- Add the chicken leg quarters to the bowl, ensuring they are well-coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or up to overnight.
- Preheat your oven to 400°F (200°C).
- Once marinated, arrange the chicken pieces in a single layer on a roasting pan or baking sheet, pouring any remaining marinade over them.
