Ingredients
  

For the Banana Bread:
  • 3 ripe bananas mashed
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 2 tbsp pure maple syrup
  • 2 cups finely ground almond flour
  • 5 tbsp tapioca flour
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tsp ground cinnamon
For the Almond Butter Glaze:
  • 2 tbsp unsweetened almond butter
  • 3 tbsp coconut butter
  • 2 tbsp pure maple syrup
  • 1 pinch ground cinnamon for the glaze
  • 1 pinch sea salt for the glaze

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: Grease a standard loaf pan with coconut oil or line with parchment paper.
  3. Step 3: Mash the ripe bananas in a large mixing bowl until smooth, leaving some chunks for texture.
  4. Step 4: Mix in the eggs, vanilla extract, and maple syrup until well combined.
  5. Step 5: In another bowl, whisk together the almond flour, tapioca flour, baking powder, sea salt, and ground cinnamon.
  6. Step 6: Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  7. Step 7: Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Step 8: Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  9. Step 9: Once baked, cool the loaf in the pan for 10 minutes before transferring to a wire rack.
  10. Step 10: For the glaze, melt almond butter and coconut butter in a saucepan over low heat, then stir in maple syrup, cinnamon, and salt until smooth.
  11. Step 11: Drizzle the glaze over the cooled banana bread and let it set before slicing.
