Ingredients
  

  • 1 tablespoon sesame oil
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon crushed red pepper
  • 1 tablespoon fresh ginger, grated
  • 1 pound boneless and skinless chicken breast, cut into 1-inch chunks
  • 4 cups broccoli, cut into medium-sized florets

Method
 

  1. In a medium bowl, combine the soy sauce, honey, rice vinegar, garlic, ginger, crushed red pepper, Kosher salt, and black pepper. Add the chunks of chicken to the marinade, ensuring they are well-coated. Let the chicken marinate for at least 10 minutes.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat. Once the oil is hot, add the marinated chicken, reserving the marinade for later. Cook the chicken for about 5-7 minutes or until it is browned and cooked through.
  3. Once the chicken is cooked, add the broccoli florets to the skillet. Pour in the reserved marinade and stir everything together. Cover the skillet with a lid and let it cook for an additional 5 minutes.
  4. Once the broccoli is cooked to your desired tenderness, remove the skillet from heat. Serve hot over steamed rice or quinoa, garnished with sesame seeds or sliced green onions.

Notes

  • For a vegan option, swap honey for maple syrup.
  • Use grilled chicken for a lighter dish.
  • Add other vegetables like bell peppers for extra nutrition.
