Ingredients
  

For the Dough:
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 tablespoon sugar
  • ½ teaspoon garlic salt
  • 2 envelopes Fleischmann's RapidRise Yeast
  • ¾ cup very warm milk (120 to 130°F)
  • ¼ cup olive oil plus more for sautéing
For the Toppings:
  • 1 package (4 ounces) crumbled feta cheese
  • 2 cups packed fresh spinach leaves
  • 1 package (8 ounces) sliced fresh mushrooms
  • ¾ cup chopped roasted red bell peppers
  • ¾ cup chopped Kalamata olives
  • cups (6 ounces) mozzarella cheese, shredded
  • ½ teaspoon Italian seasoning

Method
 

Step-by-Step Instructions:
  1. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sugar, garlic salt, and yeast. Stir to mix well. Gradually add the warm milk and ¼ cup olive oil. Mix until everything is well combined and a dough starts to form.
  2. Transfer the dough to a lightly floured surface and knead for about 5 minutes until it becomes smooth and elastic. If the dough is too sticky, sprinkle a little more all-purpose flour as needed.
  3. Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm area for about 30 minutes or until it has doubled in size.
  4. While the dough is rising, preheat your oven to 425°F (220°C).
  5. In a sauté pan over medium heat, add a tablespoon of olive oil. Once hot, add the sliced mushrooms and cook until they are tender and have released their moisture, about 5 minutes. Add the spinach and cook until wilted. Remove from heat and set aside.
  6. Once the dough has risen, punch it down and spread it out evenly in the bottom of the greased 9x13 inch baking dish. Layer the sautéed mushrooms and spinach over the dough. Then, sprinkle the roasted red bell peppers, Kalamata olives, crumbled feta cheese, and shredded mozzarella cheese evenly on top. Finally, sprinkle Italian seasoning across the surface.
  7. Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.
  8. Remove the pizza from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Slice and serve warm!
