  • 1/3 cup raw sunflower seeds, hulled
  • 1/4 cup pepitas

  • 1/4 cup pure maple syrup
  • 1/4 cup honey
  • 1/4 cup extra virgin olive oil
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/2 cup chopped dried cherries
  • 1/3 cup dried apricots, coarsely chopped

Method
 

Cooking Instructions
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C) for that perfect toasty flavor.
  2. Step 2: Combine Dry Ingredients - In a large mixing bowl, combine oats, pistachios, sunflower seeds, pepitas, coconut flakes, brown sugar, salt, cinnamon, and cardamom. Stir until mixed.
  3. Step 3: Mix Wet Ingredients - In a separate bowl, whisk together olive oil, maple syrup, and honey until combined.
  4. Step 4: Combine Wet and Dry - Pour wet mixture over dry ingredients and mix until all are coated.
  5. Step 5: Spread on Baking Sheet - Line baking sheet with parchment paper and spread granola mixture evenly. Press down gently to encourage clumping.
  6. Step 6: Bake - Bake for 25-30 minutes, stirring halfway through until golden brown. Watch to prevent burning!
  7. Step 7: Add Dried Fruits - Let cool for 10 minutes, then stir in dried cherries and apricots. Cool completely.
  8. Step 8: Store - Transfer to an airtight container; it can be stored at room temperature for up to two weeks.
