Ingredients
  

For the Bars:
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 3/4 cup packed light-brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon table salt
  • 1 egg
  • 10 tablespoons salted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
For the Caramel Layer:
  • 1/2 cup salted butter
  • 1 cup brown sugar, packed
  • 1/4 cup corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). This ensures that your bars bake evenly.
  2. Step 2: Grease a 9x13-inch baking pan with cooking spray or line it with parchment paper for easy removal.
  3. Step 3: In a large mixing bowl, combine the all-purpose flour, rolled oats, light-brown sugar, baking soda, and table salt. Stir until well combined.
  4. Step 4: Add the melted salted butter, egg, and vanilla extract to the dry ingredients. Mix until everything is just combined, being careful not to overmix.
  5. Step 5: Gently fold in the chocolate chips until they are evenly distributed throughout the batter.
  6. Step 6: Transfer the batter to the prepared baking pan and spread it out evenly. Press it down slightly to ensure it holds together during baking.
  7. Step 7: Bake in the preheated oven for about 15 minutes, until the edges are lightly golden.
  8. Step 8: While the base is baking, prepare the caramel. In a saucepan over medium heat, combine the salted butter, brown sugar, corn syrup, salt, and baking powder. Stir continuously until everything is melted and smooth.
  9. Step 9: Once the base is out of the oven, pour the caramel mixture over the baked layer. Spread it evenly with a spatula.
  10. Step 10: Using the remaining batter, drop spoonfuls over the caramel layer. It doesn’t have to cover it completely; some caramel should be visible.
  11. Step 11: Return the pan to the oven and bake for an additional 20-25 minutes, or until the top is golden brown and set.
  12. Step 12: Remove the pan from the oven and let it cool completely before cutting into squares. This will help the bars set properly.

  • These bars can be made a day in advance for gatherings.
  • Store bars in an airtight container at room temperature for up to 5 days.
  • For freezing, wrap individual bars and place in a freezer-safe container.
