Cooking Mint Chip Brookies: The Process
- Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your brookies bake evenly.
- Step 2: Prepare the Baking Pan - Line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
- Step 3: Make the Brownie Layer - In a medium saucepan over low heat, melt the coarsely chopped unsweetened baking chocolate and 1 cup of unsalted butter together, stirring until smooth.
- Step 4: Mix in Sugar and Eggs - In a large mixing bowl, whisk together the melted chocolate mixture with 1 ½ cups of granulated sugar until combined. Then, add in 3 large eggs, one at a time.
- Step 5: Combine Dry Ingredients - In a separate bowl, whisk together 2 tablespoons of unsweetened cocoa powder, 1 cup of all-purpose flour, and the remaining salt. Gradually fold this dry mixture into the wet ingredients until just combined.
- Step 6: Spread the Brownie Batter - Pour the brownie batter into the prepared baking pan, spreading it evenly with a spatula.
- Step 7: Make the Cookie Layer - In another mixing bowl, beat together 1 cup of softened unsalted butter and 1 ½ cups of granulated sugar until light and fluffy. Add in 1 large egg, 1 teaspoon of vanilla extract, and 1 teaspoon of peppermint extract.
- Step 8: Add Dry Ingredients to Cookie Dough - In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt. Gradually add this to the wet mixture, mixing until combined.
- Step 9: Layer the Cookie Dough - Scoop spoonfuls of the cookie dough over the brownie layer in the baking pan. Use a spatula to spread it gently.
- Step 10: Bake - Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
- Step 11: Cool and Serve - Once baked, remove the brookies from the oven and let them cool in the pan for about 15 minutes, then cut into squares and enjoy!
Notes
- Pay attention to the quality of your chocolate for the best flavor.
- Don’t overmix the batter after adding flour to keep it tender.
- Allow brookies to cool completely before cutting for clean edges.
