  • 2 pounds boneless skinless chicken thighs (6-8 pieces)
  • 3 tablespoons vegetable oil divided
  • 1.5 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried chopped onion
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 limes
  • 1 tablespoon finely chopped cilantro

Method
 

Preparation Steps:
  1. In a large bowl, combine the vegetable oil, chili powder, garlic powder, dried onion, oregano, cumin, smoked paprika, salt, and pepper. Mix well to create a marinade. Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and let them sit for at least 30 minutes, or refrigerate for up to 24 hours for deeper flavor.
  2. Heat a large skillet or cast iron pan over medium-high heat. Once hot, add 1 tablespoon of vegetable oil.
  3. Carefully place the marinated chicken thighs in the skillet, making sure not to overcrowd the pan. Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  4. Once the chicken thighs are cooked, remove them from the skillet and let them rest for a couple of minutes. Squeeze fresh lime juice over the top and sprinkle with finely chopped cilantro for a fresh touch.
